Paillard: a tasteful blend of European and American ways
Born of an innovative union between European and American culinary traditions, Café Boulangerie Paillard saw the light of day on June 16th, 2006, in the heart of historic Quebec City. A bakery, a pastry shop, a sandwich station and an Italian ice cream counter now share the limelight at 1097, rue Saint-Jean. Mr. Yves Simard, the passionate man behind this unprecedented initiative, thus made his oldest dream a reality: merging the finesse of French cuisine with American efficiency in order to create a new concept of food delivery proposing refined yet accessible fare.
The starting point to the creation of this link between two distinct food cultures began with research into a unique expertise: the art of making bread. His quest led Yves Simard to retain the services of one of the greatest master bakers in Paris, Dominique Saibron, to direct training of the future Paillard team of bakers. Following several months of intensive apprenticeship, these expert bakers produced an astonishing selection of breads made exclusively with organic stone-ground flour imported from France. Building on its recent organic certification, the bakery continues to innovate while preserving the authenticity of traditional French techniques.
To the now famous bakery have been added three equally prestigious sections: the sandwich station, the pastry shop and the gelateria, an Italian ice cream counter. Thousand of visitors and residents alike have sampled the variety of culinary delights on offer at Paillard, a unique new destination for food-lovers.
